Chicken Divan

This is a quick and easy dish that my gran and mom used to cook. I never really liked casseroles, but this is an exception. All of the cooking that my gran did was adaptable to whatever she had in her kitchen at that time. I can't ever remember her needing a missing ingredient, because if she didn't have the ingredient, she just modified the recipe! Yet another of her skills that I didn't inherit :)

Chicken Divan
Preheat oven 350◦

6-8 cups Fresh cooked or frozen cooked broccoli
4-6 cups cooked chicken, diced (I microwave chicken breast)
1 cup mayo
2 cans cream of chicken soup (I substitute 1.5 cups sour cream, it makes it tart)
2 Tbsp lemon juice
Salt and pepper to taste
1+ cup grated cheddar cheese
Crushed saltines or crackers to cover top (you can add small amount of butter)
15 cup baking dish (you can halve recipe or place in separate containers and freeze)

Mix Mayo, seasonings, sour cream or cream of chicken soup and lemon juice.
Layer chicken, mayo, broccoli,mayo, chicken.... until all ingredients are used.
Sprinkle cheese and saltines over top.

Bake uncovered 25 minutes
